Tasting Notes
This 100% Birch Creek Vineyard Semillon was grown and harvested to protect the acidity of this typically flabby (low acid) grape. The goal was to produce a focused, dry, food worthy Semillon highlighting the grape’s, often escapable, varietal character. This was accomplished with stainless steel fermentation without malolactic fermentation. It is a classic Washington State Semillon displaying a touch of tropical fruit woven with slightly dried grass aromatics. The acid impact on the palate is greater than expected helping to elevate flavors of lemon grass, honeydew melon and grass while hints of lychee nut, pineapple and barely ripened banana play in the background.
